Ingredients: 2 tbsp olive oil 1 medium onion – chopped 1 garlic clove – crushed 1 carrot – finely chopped 1 celery stick – finely chopped 1 red bell pepper – diced 2 cups mushrooms – sliced 400 g can crush tomatoes 2 tbsp tomato paste 1 cup vegetable stock Salt and freshly ground Black Pepper to taste.
Ingredients for the beans:
1 x 410g tin of red kidney beans – drained and rinsed ¼ tsp chili powder (optional)
Ingredients for the topping:
½ cup grated vegan cheese (optional) Cilantro leaves, chopped avocado, and vegan sour cream.
Preparation method:
Step 1: Heat the oil in a large saucepan over medium heat. Add onion and garlic, and stir to coat them in oil, then cover and cook for 5 minutes, stirring occasionally.
Step 2: Stir in carrot, celery, red bell pepper, and mushrooms, cover again and cook for another 5 minutes.
Step 3: Add the crushed tomatoes, tomato paste, stock, and salt and pepper to taste. Bring to a boil stirring regularly then reduce heat to the low-medium setting. Cover and simmer for 25 minutes.
Step 4: While the chili is cooking, blend half of the kidney beans in a food processor until smooth. Add to chili with remaining whole beans and cook until heated through (about 10 minutes).
Step 5: Sprinkle vegan cheese on top, if desired, then serve topped with cilantro leaves, chopped avocado, and vegan sour cream.
