2 spaghetti squash, halved lengthwise and seeded

1 tablespoon olive oil

Salt and pepper to taste

1 jar (24 oz) marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

Directions:

Preheat the oven to 350 degrees F (175 degrees C).

Place the squash halves cut-side down on a baking sheet, and drizzle with olive oil. Season with salt and pepper.

Bake in the preheated oven for 30 minutes.

Remove from the oven, and let cool slightly. Discard the skin, and shred the flesh with a fork to resemble spaghetti noodles.

In a large bowl, mix together the shredded squash, marinara sauce, mozzarella cheese, Parmesan cheese, and basil leaves.

2. Creamy Avocado Pasta

Ingredients:

1 pound rotini pasta

1 avocado, halved and pitted

1/2 cup olive oil

1 garlic clove, minced

1/2 cup heavy cream

Salt and pepper to taste

1/4 cup chopped fresh parsley leaves for garnish

Directions:

Bring a large pot of salted water to a boil. Cook pasta according to package instructions for al dente; drain.

In a food processor or blender, combine avocado, olive oil, garlic, and heavy cream. Season with salt and pepper. Blend until smooth.

Toss pasta with avocado sauce until evenly coated. Garnish with parsley leaves before serving.

3. Spicy Sausage Pasta

Ingredients:

1 pound hot Italian sausage

1 tablespoon olive oil

4 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes

1/2 cup dry white wine

1 jar (24 oz) marinara sauce

1 pound penne pasta

Salt and pepper to taste

1/4 cup chopped fresh parsley leaves for garnish

Directions:

In a large saucepan over medium heat, cook sausage in olive oil until no longer pink. Add garlic and red pepper flakes; cook for 1 minute. Pour in the wine, and bring to a boil. Simmer until the liquid has reduced by half.

Stir in marinara sauce, and bring to a simmer. Season with salt and pepper.

4. Tomato Basil Pasta

Ingredients:

1/2 pound angel hair pasta

1 tablespoon olive oil

3 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes

1/4 cup dry white wine

1 can (14.5 oz) diced tomatoes, undrained

1/4 cup chopped fresh basil leaves

Salt and pepper to taste

Directions:

Bring a large pot of salted water to a boil. Cook pasta according to package instructions for al dente; drain.

In a large saucepan over medium heat, heat olive oil. Add garlic and red pepper flakes; cook for 1 minute. Pour in the wine, and bring to a boil. Simmer until the liquid has reduced by half.

Stir in diced tomatoes and basil leaves. Season with salt and pepper. Bring to a simmer, and cook until heated through.

Serve tomato sauce over angel hair pasta.

5. Mac and Cheese

Ingredients:

1 pound elbow macaroni

3 tablespoons butter

3 tablespoons all-purpose flour

1 tablespoon dry mustard powder

4 cups milk

8 oz shredded sharp Cheddar cheese

Cook macaroni in a pot of boiling water according to package instructions for al dente; drain.

In the same pot, melt butter over medium heat. Stir in flour and mustard powder until smooth. Pour in milk, and cook until thickened, stirring constantly.

1-pint cherry tomatoes halved

8 oz fresh mozzarella cheese, cubed

1/4 cup chopped fresh basil leaves

Directions:

Bring a large pot of salted water to a boil. Cook pasta according to package instructions for al dente; drain.

In a large saucepan over medium heat, heat olive oil. Add garlic and cherry tomatoes; cook until the tomatoes have started to soften, about 5 minutes.

Stir in mozzarella cheese and basil leaves. Season with salt and pepper. Serve hot.
