Ingredients
One medium serrano pepper, cut into thirds
Four large garlic cloves
1 -2 inch piece fresh ginger, peeled and coarsely chopped
One chopped yellow onion
Six teaspoons canola oil or grapeseed oil
Two teaspoons ground cumin
Two teaspoons ground coriander
½ teaspoon ground turmeric
Two ¼ no salt added canned diced tomatoes with their juice
¾ teaspoon kosher salt
2 15 ounces rinsed cans chickpeas
Two teaspoons garam masala
Fresh cilantro to garnish chickpeas curry later
Directions
Pulse serrano, ginger, and garlic in a food processor, until they get mixed properly. Scrape the sides of the jar down and pulse it again. Add onions to it and pulse it until it chops down finely. Make sure it does not get watery.
Place a large saucepan over medium-high heat and heat some oil in it. Add the prior prepared onion mixture to the oil and stir it occasionally until it gets softened for around 3 to 5 minutes.
Add cumin, coriander, turmeric and cook it. Keep stirring the mixture for 2 minutes.
Pulse all the tomatoes in a processor till they are finely chopped. Add the mixture to the pan along with adding salt as per taste. Reduce the heat to cook the mixture to simmer and stir it occasionally for the next 4 minutes. Add garam masala and chickpeas and reduce the heat to a more gentle simmer. Cover the pan lid and cook the mixture for around five more minutes, followed by occasionally stirring.
Serve the chickpeas curry with cilantro if you wish to.
