+/- 1 can of coconut milk (optional)

Salt and pepper to taste

Instructions:

 1. Heat the oil in a large pot over medium heat. Add the onion and fry for 5 minutes until softened.

 2. Add the garlic, ginger, chili pepper (if using), cumin, coriander, and turmeric. Fry for 1 minute until fragrant.

 3. Add the tomato paste and fry for 1 minute more.

 4. Pour in the broth or water and bring to a boil.

 5. Add the chopped vegetables and cook for 10-15 minutes until tender.

 6. Add coconut milk (if used) and season with salt and pepper to taste. Serve hot with rice or bread.

Ingredients:

1 tablespoons oil

1 onion, diced

3 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon curry powder

2 teaspoons ground turmeric

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon cayenne pepper, or to taste

Salt and freshly ground black pepper, to taste

1 can (14.5 ounces) diced tomatoes, undrained

1 can (15 ounces) chickpeas, drained and rinsed

1 can (15 ounces) light coconut milk

2 cups chopped spinach

1/4 cup chopped fresh cilantro leaves

Directions:

In a large skillet or wok, heat oil over medium heat. Add onion, garlic, ginger, and spices; cook and stir for 2 minutes.

Add tomatoes and chickpeas; cook and stir for 5 minutes.

Stir in coconut milk and spinach; cook for 2 minutes, or until spinach is wilted. Stir in cilantro just before serving.
