1 large onion, chopped coarsely
2 ½ pounds small white or red potatoes (about 10)

Bake at 400°F (200°C) for about 25 minutes until the potatoes are tender and the skin is crisp.
Combine all ingredients except paprika in a bowl; toss well.
Spoon into an oiled shallow baking dish, sprinkle with paprika, cover tightly, and bake until hot throughout, about 20 minutes.
Uncover and bake for 15 minutes more.
Vegetarian Roast with Potatoes and Carrots
In this vegetarian roast recipe, you use potatoes and carrots in a mix of tomato sauce, vegetarian lentils, and spices. This vegetarian roast is wonderful when served with rice or pasta.
The vegetarian roast can also be made with potatoes and different kinds of vegetables such as eggplant or butternut squash. These vegetables are roasted at the same time to make a delicious vegetarian dish that will please everyone at the table.
You will need:
4 tablespoons of olive oil 3 large carrots, peeled and cut into chunks 2 pounds of baby potatoes or regular potatoes, peeled and halved Salt Pepper 1 cup of vegetarian lentils 2 cups of water 1 cup of chicken broth ½ tablespoon chicken bouillon Zest from one lemon 2 cloves of garlic, chopped 1 onion, chopped
Preheat the oven to 350 degrees.
Put a pot over medium heat and add olive oil.
Once the oil is hot, add garlic and onion. Cook for about five minutes.
Add vegetarian lentils to the pot along with water, chicken broth, bouillon, and lemon zest.
Stir and let it come to a boil.
Add salt and pepper to taste.
Put the carrots and potatoes into a roasting pan.
Drizzle with 2 tablespoons of olive oil and stir so that they are coated in the oil evenly.
Pour vegetarian lentils over vegetables, cover, and bake for 45 minutes or until vegetables are tender.

Layer half of this mix in the bottom of a greased baking dish. Mix vegetarian lentils with eggs, spinach, remaining onion mixture, and top this with the vegetarian roast mixture. Cover vegetarian roast with the remaining vegetarian roast mix Bake covered for 30 minutes at 350 degrees F Remove cover and bake an additional 15-20 minutes until vegetarian roast is golden brown.
